This comforting dish is a retro family favourite. Lots of savoury sauce tops toasted English muffins below, which soak it up and become deliciously soggy. Serve in shallow bowls.

Ingredients

3 tbsp (45 mL) PC Blue Menu Celeb Margarine - Original
1/4 cup (50 mL) all-purpose flour
1 cup (250 mL) 2% milk
1 cup (250 mL) PC Blue Menu Chicken Broth
1 tbsp (15 mL) Dijon mustard
1 can (398 mL) PC Blue Menu Small Sweet Tender Peas , drained
2 cans (each 213 g) PC Blue Menu Wild Pacific Sockeye Salmon , drained and broken up with fork
3 green onions, chopped
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
6 PC Blue Menu Whole Grain Multi-Grain English Muffins , halved and toasted
2 tbsp (25 mL) chopped fresh dill

Instructions

  1. In small saucepan, melt margarine over medium heat. Stir in flour until completely incorporated. Cook, stirring, until mixture is frothy, about 1 minute. Gradually whisk in milk, chicken broth and mustard; cook, stirring often, for 2 minutes or until mixture is thick.
  2. Stir in peas, salmon, green onions, salt and pepper; cook for 2 minutes or until heated through.
  3. Spoon mixture over toasted English muffins and sprinkle with dill.
