Thanks to the frozen fruit blend, you can make this berry crisp year-round, regardless of what berries are in season. The cereal adds crunch and fibre.

Ingredients

1 pkg (600 g) PC 6-Berry Frozen Fruit Blend
2 cups (500 mL) PC Organics Ancient Grains Cereal
1/4 cup (50 mL) PC 100% Pure Safflower Oil
1/2 cup (125 mL) maple syrup
1/2 cup (125 mL) quick-cooking oats

Instructions

  1. Preheat oven to 375° F (190° C). Spray 8-inch (2 L) square glass baking dish with PC Blue Menu Canola Oil Cooking Spray.
  2. In bowl, stir together fruit blend with juices and half of maple syrup; stir to mix well. Spread mixture evenly over bottom of prepared baking dish.
  3. Place cereal in sealable plastic freezer bag; seal bag and crush flakes to half their original size.
  4. In bowl, stir together oil and remaining maple syrup. Stir in oats and crushed cereal until well mixed; spread evenly over fruit mixture.
  5. Bake in centre of oven for 30 minutes or until topping is golden.

Chef's Tips

For best results, bake in oven. Alternatively, cook in microwave oven on HIGH for 5 minutes, rotating dish half way.
For apple crisp, substitute 4 cups (1 L) chopped peeled apples for the fruit blend.
