Jasmine Rice Stir Fry with Bok Choy and Shiitake Mushrooms

This is the perfect side dish for our PC General Tao Chicken Bites, or most any other Asian flavoured main course.

Ingredients

1/2 cup (125 mL) PC Jasmine Rice
2 tbsp (25 mL) canola oil
2 cups (500 mL) sliced shiitake mushrooms caps
3 cups (750 mL) roughly chopped bok choy
3 tbsp (45 mL) oyster sauce
2 tsp (10 mL) sambal olek (or other chili paste)
2 tbsp (25 mL) sliced green onions

Instructions

1. Measure 1 cup (250 mL) water into small saucepan with tight-fitting lid. Bring to a boil. Add rice, cover saucepan and simmer over low heat for 8 to 12 minutes or until water is absorbed. Fluff with a fork. Turn out into a bowl. Cool to room temperature. Chill until cold, about 30 minutes.
2. In wok or large frying pan, heat oil over medium-high heat. Add shiitakes; stir-fry for 1 minute. Add bok choy; stir-fry for 2 to 3 minutes or until vegetables are cooked through.
3. Stir in cooked rice. Add oyster sauce and chili paste; stir-fry for 2 minutes longer or until heated through.
4. Transfer to serving dish; sprinkle with green onions. Serve with PC General Tao Chicken Bites.

Chef's Tips

If you have leftover cooked rice, use 2 cups (500 mL).
